Pork Jambalaya Recipe

From the New Dieters Cookbook; supposed to put cubed cooked pork, but we just used more smoked turkey sausage.

Recipe Ingredients for Pork Jambalaya

1 lb smoked turkey sausage
3/4 cup onion, chopped
1 cup red pepper
1 cup mushrooms, sliced
1 clove garlic, minced
1 tsp. chili powder
1/4 tsp. ground red pepper
2 1/4 cup water
16 ounces canned, diced tomatoes
9 ounces okra, frozen cut
1 cup rice
1 tbsp. chicken bouillon granules

Recipe Directions for Pork Jambalaya

  1. Half turkey sausage lengthwise and cut into 1/4-inch slices.

  2. In a 12-inch skillet, cook sausage, onion, red pepper, mushrooms, and garlic until onion is tender.

  3. Stir in chili powder, ground red pepper, and 1/4 tsp pepper. Cook and stir for 1 minute.

  4. Stir in water, undrained tomatoes, pork, okra, uncooked rice, and bouillon granules. Bring to boiling; reduce heat. Cover and simmer for 15 to 20 minutes or until rice is tender.
