Recipe Ingredients for Pork for Pork with greens and beans

4 lb. boneless pork roast, cut in large pieces

for the wet rub:
1/2 tsp dried rosemary
1 tsp black pepper
1/2 tsp fennel seeds
2 tsp salt
1/2 tsp hot pepper flakes
1 tsp cumin
1/2 tsp dried oregano
2 cloves garlic
1 tbsp brown sugar, rounded
2 tbsp red wine vinegar
1 tbsp olive oil

Recipe Directions for Pork for Pork with greens and beans

  1. Make rub: Grind first 7 ingred (omit pork) of wet rub. Mash in garlic, then mix in sugar, vinegar and oil, set aside

  2. Prepare pork: cut pork into 6-8 large pieces, trimming fat, place into baking dish and cover with rub.

  3. Bake: at 350 F, uncovered for about a hour, turn and bake additional hour til crusty and tender
