Low calorie alternative to take-out Chinese. Made with brown rice.

Recipe Ingredients for Pork Fried Rice

1 cup brown rice, uncooked
2 tbsp extra virgin olive oil
1/2 cup frozen peas
2 cups green onions, raw
1 pork chop
1/8 cup fresh ginger
1/16 cup fresh garlic
1/2 cup raw celery
1/4 cup mushrooms
2 tbsp low sodium soy sauce
1/2 tsp salt

Recipe Directions for Pork Fried Rice

  1. Heat up 1 tbsp of oil in a large wok on medium heat.

  2. Chop up the pork chop into bite size pieces and brown them in the wok.

  3. Add 1 tbsp of oil, celery, green onions, ginger, garlic, and mushrooms and let cook for 5 minutes.

  4. Add peas and rice. Let cook 3-5 minutes.

  5. Add soy sauce and salt to taste.
