Pork Fried Rice Recipe

Pork Fried Rice make when you have left over pork tenderloin. I reduced the eggs from 2 to 1 and the rice and pork in half from original recipes which was designed to serve 4. This was extremely good. When I made this I had left over Arborio rice so will have to check how this tastes with regular white rice.

Recipe Ingredients for Pork Fried Rice

18 7/10 grams peanut oil (4 tsp)
1 lg egg
1/4 cup scallions, chopped
1/2 cup carrots, chopped
2 cloves garlic, chopped
1/2 cup rice, arborio
1 1/4 grams chicken bouilon
4 oz pork tenderloin, chopped (1/2 cup)

Recipe Directions for Pork Fried Rice

  1. Heat 2 teaspoons of the oil in a large skillet over medium heat. Add eggs and cook 2 to 3 minutes, stirring frequently, until cooked through and scrambled. Remove eggs from pan and set aside.

  2. To the same skillet over medium heat, add remaining 2 teaspoons oil. Add scallions, carrots and garlic and saute 2 minutes. Add rice and pork; cook 1 minute, stirring constantly. Add chicken stock and bring to a boil. Reduce heat to low, cover and simmer 5 minutes, until liquid is absorked. Fluff with a fork and season, to taste, with salt and black pepper. Stir in cook egg just before serving.
