Wonderfully authenic Mexican flavor. Easy to make. I use left over pork loin roast.

Recipe Ingredients for Pork Enchilada Bake

10 oz cooked shredded pork loin
1 large onion, chopped
1/2 cup salsa
1 cup enchilada sauce
3 oz cheddar cheese, grated
1/3 cup fat free sour cream
8 corn tortillas

Recipe Directions for Pork Enchilada Bake

  1. Preheat over to 375. In skillet over medium high heat, cook chopped onion in PAM-sprayed skillet until limp and translucent. Set aside in bowl.

  2. In same skillet, heat up shredded pork, adding the salsa and cook and thoroughly heated. Add the sour cream and set aside.

  3. To assembly: cut corn tortillas in half. Spray casserole dish with PAM. Cover bottom of dish with 6 of the tortilla halves; top with 3/4 cup pork mixture; some of the chopped onions, finishing with 1 oz grated cheese. Repeat layers twice, finishing with cheese. Bake 20 to 25 minutes or until bubbly and cheese on top is melted.

  4. Serve with refried beans and tortillas chips.
