200 grams Pork, Fresh, Shoulder, Whole
100 grams Peppers, Sweet, Red
100 grams Cured Longaniza Chorizo
1 large Onions
100 grams Carrots
240 grams Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
5 grams Garlic
10 prunes Prunes, Dried, Uncooked
400 grams Tomatoes Diced
400 grams Water
3 tsp Paprika
28 grams Chilli
75 grams Vaalia Natural Low Fat Yogurt
1 1tsp Olive Oil
20 grams Butter
15 grams Wheat Flour, White, All-purpose, Enriched, Bleached

Recipe Directions for Pork, chorizo and chickpea stew with peppers and prunes

  1. Pre-heat oven to 180oC.

  2. Slice and sauté chorizo for 2mins in an ovenproof pan that has a lid.

  3. Add 1tsp of olive oil to pan and sauté diced pork until browned.

  4. Remove pork and chorizo from the pan and keep warm.

  5. Add the butter to the pan and sauté onions for 3mins, then the garlic and chillies for a further 1min.

  6. Add the flour and stir to combine.

  7. Return the meat to the pan with the carrots.

  8. Add the paprika and stir to combine.

  9. Add the tin of chopped tomatoes, fill the can with water and add to the pan.

  10. Bring to the boil, add the lid to the pan and put in the oven to cook for 45 mins.

  11. Remove the pan from the oven, add the chopped peppers, prunes and chickpeas.

  12. Return the pan to the oven uncovered and cook for a further 30-45mins, until the sauce has thickened.

  13. Remove the pan from the oven, stir through the yogurt and serve.
