4 clove Garlic
0.5 tsp Salt, Table
0.25 tsp Pepper, Black
10 pieces Sun Dried Tomatoes
10 oz Spinach
1/4 cup Basil and Tomato Feta Crumbled
3 tbsp Cream Cheese, Fat Free
2 tbsp Lemon Juice, Canned Or Bottled
16 oz Pork, Fresh, Loin, Sirloin (Chops), Boneless
2 tsp Classic Dijon Mustard
0.13 tablespoon Oregano

Recipe Directions for Pork Chops Stuffed with Feta and Spinach

  1. Preheat broiler and broiler pan.

  2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add 2 garlic cloves; saute 1 min. Add 1/4 tsp salt, 1/8 tsp pepper, tomatoes, and spinach; saute until moisture evaporates. Remove from heat; stir in cheeses and rind.

  3. Cut a horizontal slit through thickest part of each pork chop to form a pocket. Stuff 1/4 cup spinach mixture into each pocket. Sprinkle remaining salt and pepper over pork. Arrange pork on broiler pan coated with cooking spray. Combine remaining garlic cloves, juice, mustard, and oregano in a small bowl; stir well. Brush half of mustard mix over pork; broil 6 minutes. Turn over, brush remainder of mustard mix on pork, broil 2 minutes or until done.
