One serving is one chop, 3/4 cup rice and 1 cup vegetables. Use a cast-iron pan or dutch oven for a one-pan meal.

Recipe Ingredients for Pork Chops with Rice

6 pork chops, sirloin, bone in
1 yellow onion, sliced
1/2 pound mushrooms, sliced
1 1/2 cups brown rice
2 1/2 cups water
1 tablespoon olive oil

Recipe Directions for Pork Chops with Rice

Brown chops in the olive oil, set aside. In the same pan, heat rice and stir constantly until it turns solid colored. Be careful not to burn rice! Add water to hot rice, bring to boil, turn down to simmer. Place the chops on top of the rice and the sliced, raw vegetables on top of the chops. Cover; cook about 1 hour until the rice is done and liquid soaked up.
