Recipe Ingredients for Pork Chops with Raspberry Sauce

4 bonless pork chops
1 tsp dried thyme, crushed
1 tsp dried sage, crushed or Dried oregano
1/2 tsp kosher salt or table salt
1/2 tsp ground black pepper
1 tbsp butter
1 tbsp olive oil
1/4 cup rasberry jam
2 tbsp orange juice
2 tbsp white wine vinegar

Recipe Directions for Pork Chops with Raspberry Sauce

  1. Combine the crushed thyme, sage, salt & pepper in a small bowl. Rub it evenly over the pork chops, both sides.

  2. Melt the butter and olive oil in a skillet and let it get hot enough to sear the chops. Cook the pork chops for 4 or 5 minutes on each side, turning once. Covering the pan with a lid helps contain spatters and also helps cook the inside of the chops.

  3. When they're done cooking (should be about 170 degrees after they've been removed from the pan) keep them warm while you make the sauce.

  4. In the skillet where the butter, olive oil and meat drippings are, add the orange juice, vinegar and raspberry jam. Cook it until the sauce is reduced to a desired consistency (it will thicken a lot as it cools).

  5. If you used raspberry jam with seeds in it, strain the sauce into a dish. Spoon the sauce onto the chops when served.

  6. Suggustion: Double the sauce.
