A good tasting low GI recipe. You may use apple instead of pear. Serve with rice and sauteed spinach.

Recipe Ingredients for Pork Chops with Pearand Ginger

8 oz boneless pork loin chops, trimmed of fat
1/4 tsp salt
1/4 tsp black pepper
1 tsp olive oil
1 leek, halved and sliced
1 pear, cored and cut into eighths
2 tsp ginger, minced
1/2 tsp Splenda
1/2 cup chicken broth, low sodium low fat
1 tbsp apple cider vinegar

Recipe Directions for Pork Chops with Pearand Ginger

  1. Sprinkle both sides of chops with salt and pepper. Heat the oil in a skillet over medium high heat. Add the pork chops and cook for 3-4 min. per side or until just a slight hint of pink in the center. Remove to a plate and keep warm.

  2. Add the leek, pear, and ginger to the skillet, then sprinkle with the Splenda. Cook, stirring frequently, until the leeks are softened and the pears are beginning to turn golden. Pour in the chicken broth and apple cider vinegar and simmer for 3-5 min. or until pears are softened and the sauce is slightly reduced. Return the pork and any juices to the skillet. Simmer for 2 min. until pork is heated through.
