Pork Chops with Garlic Herb Butter

Recipe Ingredients for Pork Chops with Garlic Herb Butter

3 tbsp olive oil
4 pork chops, thick
1 tsp thyme, on sprigs
4 tbsp unsalted butter, softened
2 cloves garlic, crushed
1/8 cup parsley, chopped
2 tbsp mint, chopped

Recipe Directions for Pork Chops with Garlic Herb Butter

  1. Blend butter, garlic, parsley and mint. Spoon into a piece of plastic wrap and shape into a roll, sealing. Store in freezer while making the meat.

  2. Heat oil in a skillet. Season the pork with salt and pepper. Place in pan and add thyme. Fry for 2 1/2 to 3 minutes per side, spooning over juices as they cook. When ready they will feel slightly springy when lightly pressed.

  3. Remove pork from pan and let rest. unwrap butter and cut into 4 slices. Place one slice on each chop.
