Modifications/Substitutions: -Pork Tenderloin in place of pork chops (leaner cut of meat, less saturated fat) -Reduced amount of oil and subbed Canola Oil -Omitted the Butter to reduce saturated fat -Substituted Brown Rice for White Rice -Reduced serving size of Rice in half -Added Broccoli for vitamins and minerals - Used water for rice instead of broth

Recipe Ingredients for Pork Chops with Chervil Sauce (Healthy Modifications)

32 ounce Pork Tenderloin
1/2 tbsp. Canola Oil
1 small Onion, minced
1/2 cup beef broth
1/2 cup dry red wine
2 tbsp. Fresh Herbs, chopped
1 cup Brown Rice
2 cups Broccoli, steamed
2 cups Water

Recipe Directions for Pork Chops with Chervil Sauce (Healthy Modifications)

  1. Season Pork Chops, heat oil in skillet, cook the chops about 20 minutes, flipping on both sides.

  2. Return skillet to heat,then onion, saute then add wine and broth stirring and scraping, add herbs.

  3. Reduce the sauce over medium heat until it thickens. Add seasonings, spoon sauce over pork chops. Serve with brown rice.
