Recipe Ingredients for Pork chop Skillet with Zucchini and Tomato

1/2 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon cumin
1/8 teaspoon garlic powder
1/2 teaspoon chili powder
1/8 teaspoon pepper
1/4 cup brown rice
15 ounce diced tomato
1/4 cup red onion
1/4 cup green pepper
2 pork chops
1 cup sliced zucchini
1/4 tablespoon sugar
2 tablespoons black olives
1/4 cup shredded mozzarella

Recipe Directions for Pork chop Skillet with Zucchini and Tomato

  1. Mix salt, garlic powder, cumin, paprika, chili powder, and pepper. Trim pork chops of fat. Spray skillet with canola oil spray, and heat; brown pork chops, seasoning with 1 teaspoon of the seasoning mixture.

  2. Drain off fat. Add rice, tomatoes, green pepper, onion, olives, and sugar. Arrange sliced zucchini around edge of skillet and sprinkle with remaining seasoning mixture. Cover and cook, stirring occasionally, for 45 to 55 minutes, or until pork is cooked through. Top with the cheese and cover, cooking a few minutes longer, until cheese is melted.
