Fast and easy chop recipe. Great for a busy day. Good experience for teenage or less experienced cooks. Adapted from 'Gooseberry Patch Christmas Book.'

Recipe Ingredients for Pork Chop and Rice Skillet / Laura H

1 1/2 lbs.boneless pork chops (6 thin chops)
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic powder
2 T olive oil
1 1/4 cups water
3/4 cup chopped onion
3/4 cup long-grain rice, uncooked
15 1/4 ounce can of whole kernel corn (drained)
14 1/4 ounces can diced tomatoes

Recipe Directions for Pork Chop and Rice Skillet / Laura H

  1. Combine 1/2 tsp salt, 1/4 tsp pepper and 1/4 tsp garlic powder. Pat chops with paper towel to dry and sprinkle salt mixture evenly over chops.

  2. Heat oil in a large skillet over medium high heat.

  3. Add chops and brown on each side 3 minutes.

  4. Remove chops from pan onto a plate.

  5. Add water, rice, onion and remaining spices. Stir to combine.

  6. top rice mixture with chops. pour tomatoes and corn over all.

  7. Bring to a boil, reduce heat , cover with lid and simmer 20 to 25 minutes or till rice and pork are done.

  8. Yeilds 6 servings.
