Recipe Ingredients for pork chop w/ orange & fennel salad

3 fruit (2-7/8" dia) Oranges
1 Teaspoon Juice
0.2 oz Cornstarch
16 oz Pork, Fresh, Loin, Sirloin (Chops), Boneless
2 tsp Fennel Seed
1 tsp Pepper, Black
1 tbsp Olive Oil
1 bulb Fennel, Bulb
4 tbsp chopped Shallots
3 cup Arugula

Recipe Directions for pork chop w/ orange & fennel salad

  1. peel oranges, cut segments from membranes into a bowl along w/ juice. squeeze juice into bowl before discarding membranes. remove segments, set aside

  2. whisk lemon juice, cornstarch into juice

  3. season pork chops with fennel seeds, pepper.

  4. heat oil in skill, cook chops until brown & cooked through.

  5. transfer to platter & keep warm

  6. add fennel & shallot to pan. cook for 1 min

  7. add arugula, cook until wilted (1-2 min).

  8. stir in orange segments. transfer everything to platter

  9. add reserved orange juice & any juice from pork. stir until thickened

  10. serve chops on fennel salad, drizzled with the pan sauce.
