Makes 4 servings

A mild pork chilli served with potato wedges and grated cheese. (I actually used lean pork mince, but it wasn't on here, so the cals are actually lower.)

Recipe Ingredients for Pork Chilli, Wedges And Cheese

400 grams Pork mince
220 grams Onions
800 grams Tinned Chopped Tomatoes
1 serving(10 g) Chillies
400 grams Potatoes
20 grams Sunflower oil
50 grams Mature Cheddar Cheese
1 tbsp Sundried Tomato Paste

Recipe Directions for Pork Chilli, Wedges And Cheese

First, Slice the potatoes into 4 wedges each. Place in a lidded tub with 2 tsp of the oil, close the lid and shake vigorously until all of the wedges are covered. Empty out onto a baking sheet and place in the oven, at 160C (Gas 3). Place the rest of the oil into a large frying pan or a wok, then set it on a low heat. Chop the onions finely and put them in the pan. When the onions are transparent, add the chillies and fry for 1 min. Add the meat and increase the heat until the meat is browned all over. Add both tins of tomatoes and the tomato paste, stirring well to cover. Bring to the boil, then reduce to a simmer for at least 25 mins. Check the potatoes and increase the temperature slightly if needed. Water can be added to the chilli if it starts to look a bit dry. When all is ready, serve the chilli in bowls, place the wedges on top and grate over the cheese.
