Recipe Ingredients for Pork casserole with apricots

2 large onions
125 g Mushrooms
450 g pork fillet
2 garlic cloves
5 fl oz stock
5 fl oz dry cider
1 tbsp tomatoe puree
3 oz dried apricots
1 tbsp flour

Recipe Directions for Pork casserole with apricots

  1. Preheat oven 170 degrees C

  2. fry onions and mushrooms in a little sunflower oil untill soft and browned

  3. roll the pork fillet in seasoned flour and add to the pan. add the garlic and stir.

  4. lower the heat and add the cider and tomatoe puree - stir well

  5. add the apricots and mixed herbs - season with salt and pepper - simmer.

  6. cover the cassorole and cook in the oven for 1-1 1/2 hours
