While not "low fat" this balanced meal gets nearly 1/2 of its total fat from healthy avocado. Skip it if you like and bring the total fat down to just 9 grams a serving. The Tostitos Nacho Cheese sauce is a hidden gem, making a great low fat substitute for shredded cheese with only 2.5g of fat per 2T indiviudal serving compared to 20g for 2oz of cheese! And you don't feel at all cheated. The high fiber from the beans and plentiful trace elements found in pork make this a "guilty pleasure" you don't have to feel too guilty about. If I were writing the recipe for myself all the salsa ingredients would start with the adjective "Hot". Flavor to your taste and skip the Salsa Verde if you need, but I highly recommend trying to find a mild green salsa instead of skipping. There's just nothing better on pork than tomatillo! Recipe Ingredients for Pork Burritos

16 oz Pork Tender Loin Section
1/4 c Salsa Verde (Green Salsa)
1/2 c Salsa (Picante Red)
1/4 c Water
1 t Chili Powder
1 t Garlic Powder
15 oz Black Beans (Drained)
1 Avocado (sliced)
1 Tomato (diced)
8 T Tostitos Salsa Con Queso (Nacho Cheese)
4 each 96% Fat Free ''Heart Healthy'' Tortillas (8")

Recipe Directions for Pork Burritos

  1. Prepare Roasted Pork:

  2. Roast the Pork Tenderloin. I like to roast a big one and then slice up the leftovers into 1 pound sections to make several meals. If you don't have any already prepared, roast with 1c water at 375 covered for 45 minutes, uncover and continue uncovered for an additional 30 minutes. Season to taste.

  3. Prepare Burrito Filling:

  4. Shread, Dice or Cube 1 pound of prepared pork. Place in 2 quart stove top pan. Add liquid ingredients (salsas and water.) Add seasonings. Cook over high heat until liquid begins to boil. Add drained black beans. Continue to cook on high heat, stirring frequently, until most of the liquid has evaporated.

  5. Prepare Individual Burritos:

  6. Scoop approximately 1/2 cup of pork and black bean mixutre onto a tortilla. Measure 2 T cheese sauce and drizzle over pork filling. Garnish with avocado slices and tomato. Roll and Enjoy!
