So yummy, a mix of leftovers turned into a delicious soup! Very filling!

Recipe Ingredients for Pork, Beans and Greens Soup

2 tbsp olive oil
1 onion, minced
2 cloves garlic
2 carrots, finely diced
1 celery stalk, finely diced
2 cups black beans, cooked
5 cups collard greens
4 cups chicken stock
6 cups water
15 oz diced tomatoes
8 oz pork, diced
1 oz ham, diced
1/4 cup barbecue sauce
1 salt and pepper

Recipe Directions for Pork, Beans and Greens Soup

Sautee onions, garlic, carrot and celery in olive oil until browned, 10-15 minutes. Add all other ingredients to soup pot with a bay leaf. Cook 60-90 minutes or until collard greens are soft and soup has thickend. Add more water as needed. Season with salt and pepper to taste.
