Asado is basically a braised dish. The pork is cooked whole, cooled and sliced, then served with the thickened braising liquid. The Chinese asado, on the other hand, is roast marinated pork loin, sliced thinly and served as an appetizer, usually as part of an assorted cold meat dish.

Recipe Ingredients for Pork Asado

2 lbs pork loin
3/4 cup soy sauce
1 tsp peppercorn
6 tbsp sugar
7 clove garlic
1 onion
1 tsp hoisin sauce
4 tbsp cooking oil
3 cups water
3 tsp corn starch

Recipe Directions for Pork Asado

  1. Prick the meat with a fork in several places.

  2. Heat the cooking oil in a large heavy pan.

  3. Lightly brown the pork, rolling it in hot oil to brown all sides evenly. Pour enough water to reach 3/4 the height of the pork. Pour in the soy sauce and add the rest of the ingredients. What you?re looking for is an agreeable balance between the saltiness of the soy sauce and the sweetness of the sugar. So, use more or less of either ingredient to suit your taste. Simmer the

  8. Strain the braising liquid. Reheat. Dissolve

  9. the starch in 1/4 cup of water. Pour into the braising liquid and cook, stirring, until thickened. Stir in the hoisin sauce and stir well to blend.

  10. Pour the sauce over the sliced pork and serve.
