Recipe Ingredients for Pork and Apple Stew

2 teaspoons olive oil, extra virgin
1 1/2 pounds pork tenderloin, roasted
1 cup onions, chopped
2 garlic cloves
1 1/2 teaspoons rosemary, dried
1 teaspoon thyme, ground
3 apples, medium
1 cup rutabagas (peeled and diced)
1 teaspoon salt
1/2 teaspoon black pepper
2 cups chicken stock, fat-free
1 tablespoon cornstarch
2 tablespoons water
1 teaspoon parsley, fresh, chopped

Recipe Directions for Pork and Apple Stew

  1. Trim any fat off the pork and cut into 1-inch pieces. Heat the oil in a Dutch oven on medium high. When the pan is hot, brown the meat in one layer. Stir to brown on all sides.

  2. Peel and chop the garlic. Add the onions, garlic and herbs to the pan and cook, stirring occasionally until the onions wilt, about 3 minutes. Chop the apples; add to pan and cook 2-3 minutes more.

  3. Stir in the rutabagas and toss to coat with oil. Season with salt and pepper and pour in the stock. Cover and simmer for 45 minutes or until the meat and vegetables are tender. Test after 30 minutes.

  4. Combine the cornstarch and water and stir into the stew. Bring to a boil to thicken.

  5. Serve topped with the chopped parsley.
