Small meatballs in tomato sauce, an old family favorite we've altered with turkey.

Recipe Ingredients for Porcupines

16 oz turkey, ground
1 small onion, diced
16 oz tomato soup, divided
1 tbsp parsley, dried
1/4 tsp salt
1/8 tsp pepper
1 egg
1 cup bread crumbs, italian
1 cup milk, nonfat
1 cup long-grain white rice, cooked

Recipe Directions for Porcupines

  1. In a large pan combine tomato soup (reserve 1/4 cup) and milk. Mix thoroughly and let simmer.

  2. In a large bowl combine turkey, 1/4 cup tomato soup, onion, parsley, salt, and pepper. Mix thoroughly and add egg, bread crumbs and 2 Tbsp of rice. Make into meatballs that are 1" across (If too loose, add more bread crumbs) and add to soup. For even proportions, make 18 meatballs, 3 per serving. Simmer 25 minutes occasionally stirring.

  3. To serve, place small amount of rice on plate and ladle meatballs and sauce on top.
