Great easy and inexpensive meal. I even serve when company is coming as it is a meal that can be prepared and then cooked and moved to the table so not a lot of work at serving time. Adjust salt to your taste - I use a sprinkle of salt when I make it

Recipe Ingredients for Porcupines

1 pound lean ground beef
1/2 cup uncooked rice
1/2 chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
1 egg
2 tsp mustard
1 tsp salt
1/4 tsp pepper
4 cups tomato juice
2 tsp chili powder
1/4 tsp allspice
1/2 tsp celery seed
1 tsp worcestershire sauce
1 tsp brown sugar

Recipe Directions for Porcupines

  1. mix ground beef, celery, peppers, rice, onions egg mustard, salt and pepper, mix well and form into 1 inch balls and place in casserole dish.

  2. Sauce

  3. Mix together and simmer 10 minutes and pour over meatballs

  4. tomato juice, chili powder, allspice, celery see, worcestershire sauce and brown sugar. Cook 1 1/2 house at 350
