Recipe Ingredients for Porcupine meatballs

1 lb. Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
1/2 cup brown rice
1/2 cup red pepper
1/2 med onion diced
1 clove garlic
1 salt and pepper to taste
8 oz. pasta sauce

Recipe Directions for Porcupine meatballs

  1. In medium bowl combine first 6 ingredients. Shape into 1 1/2 inch balls, place in shallow baking dish, cover w/ foil and refrigerate for 15 minutes.

  2. Heat oven to 350. Take meatballs out of fridge, and bake for 20 minutes (leave foil on.) Remove from oven, drain any fat/grease, cover with pasta sauce and bake another 20 min. Remove foil, and bake another 10 min. Serve w/ fresh salad.
