Recipe Ingredients for Porcupine Meatballs

1 1/2 pounds lean ground beef
1 can tomato paste
1/2 cup chopped green pepper
1 cup rice
2 eggs
2 T paprika
1 T chopped dried onion
1 t garlic powder
2 cups water

Recipe Directions for Porcupine Meatballs

  1. Mix eggs, ground beef, chopped green pepper, dried onion and garlic power. Make into small palm sized balls. Sprinkle with paprika. Place into skillet and brown on all sides.

  2. Mix paste and water and salt and pepper to taste and pour into skillet until meatballs are almost covered in water tomato mixture.

  3. Cook covered for an hour or until rice is done inside the meatball.
