A wonderful, cheap and filling dinner. You could replace the pasta with cooked rice as well. It does take 1.5 to 2 hours from start to finish...but well worth the wait and preparation. Enjoy!

Recipe Ingredients for Porcupine Meatballs with Angel Hair Pasta

1 lb lean ground beef, 93%/7%
1 lb lean ground pork
2/3 cup long grain rice, uncooked
1/2 cup milk, 2%
1 large egg, beaten
1 tbs salt
2 tsp chili powder
2 tbs vegetable oil
28 oz crushed tomatoes
2 1/2 cups water
1/3 cup dried chopped onion, spices
1/4 tsp garlic powder
1/4 tsp cayenne powder
12 oz angel hair pasta

Recipe Directions for Porcupine Meatballs with Angel Hair Pasta

  1. Combine ground beef and ground pork in a large bowl and mix well. Add rice, milk, egg, 2 teaspoons salt and 1 teaspoon chili powder and mix well. Shape mixture into 1.5 inch balls.

  2. Heat vegetable oil in a large skillet over med-high heat until hot. Cook the meatballs in batches in the hot oil until browned on all sides; drain.

  3. Combine undrained tomatoes, remaining salt, remaining chili powder, water, onion, garlic powder and cayenne pepper in a large saucepan and mix well. Bring to a boil over high heat, stirring occasionally. Reduce heat to low.

  4. Add meatballs to tomato mixture and mix well; cover. Cook over low heat, stirring occasionally, for 1 hour. Serve on pasta or rice.
