Recipe Ingredients for Porcupine Meat Balls

1 lb ground beef
1 cup rice
4 oz spaghetti
1 egg
4 cups beef broth
1 oz olive oil

Recipe Directions for Porcupine Meat Balls

  1. Note: I use Rice a Ronni Beef Rice Mix for the rice/spaghetti mix.

  2. or

  3. Break angel hair pasta or thin spaghetti into very small pieces. Add uncooked rice and pasta pieces into raw ground beef. Add egg and mix well. Roll mixture into twenty walnut sized balls. Brown in olive oil. Then:

  4. If using Rice a Ronni add the seasoning packet to 2.5 cups of hot water. Pour over browned meatballs. Add 2 cups beef broth. Bring to boil and then turn down to low and simmer for thirty minutes or until rice is fully cooked in meatballs.

  5. or: if using the above recipe as is:

  6. Pour 4 cups of broth over browned meatballs. Bring to boil and then turn down to low and simmer for thirty minutes or until rice is fully cooked in meatballs.
