Recipe Ingredients for porcini chicken breasts

1/2 oz Dried Porcini Mushrooms
1 tbsp chopped Onions
1 cup, diced Celery
1/2 oz Vermouth
1 1/2 cup Corn Flakes
1 tablespoon Sage
3/10 tablespoon Thyme
16 oz Chicken, Breast, Meat Only

Recipe Directions for porcini chicken breasts

  1. pour 1 cup boiling water over dried mushrooms. set aside to soak until softened, about 10 min

  2. drain reserving the soaking liquid

  3. spray a medium nonstick skillet with nonstick spray and set over med. heat. add the onion and celery; cook, stirring frequently, until slightly softened, about 2 min. add the softened mushrooms and cook sitrring cvonstantly about 1 min.

  4. add the vermouth and scrape up any browned bits from the bottom the skillet. transfer the mixture to a medium bowl. add the cornflakes, sage, thyme and salt and 1/4 cup of the reserved mushroom liquid. set aside until the cornflakes absorb the liquid , about 3 minutes.

  5. preheat the oven to 350 spray a 9 inch square baking dish with nonstick spray

  6. make a pocket in the side of each chicken breast by inserting a sharp paring knife into the thickest part, then gently cutting back and forth until a small chamber has opened in the side. Do not cut through to the back or the sides of the breasts. Enlarge the pockets gently with your fingers

  7. stuff one quarter of the stuffing into each breast place the breasts in the baking dish. bake, basting occasionally with the remaining mushroom liquid until the chicken is browned on the outside and cooked through about 40 minutes

  8. Let the chicken stand 5 min before serving
