Yummy muffins! Makes 1 dozen. I got this recipe from Taste of Home's 30-minute cookbook.

Recipe Ingredients for Poppy Seed Pound Cake Muffins

2 cups flour
1 tbsp poppy seeds
1/2 tsp salt
1/4 tsp baking soda
1/2 cup margarine, softened
1 cup sugar
2 eggs
8 ounce plain yogurt
1 tsp vanilla extract

Recipe Directions for Poppy Seed Pound Cake Muffins

  1. Combine flour, poppy seeds, salt and baking soda; set aside.

  2. In a mixing bowl, cream butter and sugar.

  3. Beat in eggs, one at a time.

  4. Add yogurt and vanilla; mix well.

  5. Stir in the flour mixture just until moistened.

  6. Spoon into greased or paper-lined muffin cups.

  7. Bake at 400 degrees for 15-20 minutes or until muffins test done.

  8. Cool in pan for 5 minutes before removing to a wire rack.
