from the Washington, D.C. Junior League Capital Classics cookbook 1989. A wonderful loaf, with a few changes I made to make it lower-cal. ORIGINAL- 1 1/2 cups vegtable oil instead of oil and applesauce 3 cups sugar instead of sugar and Splenda 3 eggs instead of 2 eggs, 1 egg white If the recipe doesn't work out, try these original measurements!

Recipe Ingredients for Poppy Seed Loaf (Capital Classics)

3 cups flour
1 teaspoon salt
1 1/2 teaspoons baking powder
3 tablespoons vegetable oil
3/4 cup applesauce
2 cups sugar
1/4 cups Splenda
2 tablespoons poppy seeds
2 eggs
1 egg white
1 1/2 cups milk
1 teaspoon almond extract
1 1/2 teaspoon vanilla extract
1 tablespoon butter, melted

Recipe Directions for Poppy Seed Loaf (Capital Classics)

  1. Grease and flour 2 medium loaf pans.

  2. Sift together flour, salt, and baking powder; set aside.

  3. In a seperate bowl, combine oil, applesauce, sugar, Splenda, milk, extracts, melted butter, eggs, and egg white to liquid mixture.

  4. Combine liquid mixture with dry ingredients, adding poppy seeds.

  5. Pour into prepared pans.

  6. Bake at 350 degrees for 1 hour.
