This is a quick and easy main dish casserole. It is great for potluck dinners. I always get a lot of compliments and requests for the recipe when I take this to get-togethers. This can be made ahead and refrigerated, or frozen.

Recipe Ingredients for Poppy Seed Chicken Casserole

32 ounce chicken breasts, boneless, skinless
8 ounces sour cream
1 can cream of mushroom soup
1/4 c butter
3 tbsp poppy seeds
3 3/5 ounces Ritz crackers, crushed, 1 roll
2 tbsp butter, melted

Recipe Directions for Poppy Seed Chicken Casserole

  1. Cook the chicken until tender.

  2. Allow to cool.

  3. Pull the chicken into small pieces, or cut into small pieces.

  4. Place in a greased 7" X 12" pan.

  5. Chop the 1/2 stick butter into small pieces and scatter over the chicken.

  6. Mix the sour cream and mushroom soup together and spread over the chicken.

  7. Crumble the crackers.

  8. Melt the 2 Tbsp. of butter in a skillet.

  9. Stir the cracker crumbs and poppy seeds in the butter.

  10. When all the butter is absorbed, spread over the soup mixture.

  11. Bake at 350 degrees for 30 minutes or until bubbly.
