Homemade, healthy granola, using ingredients found in my corner of Spain, Cantabria. Local honey, walnuts, prunes, and grain. Others come from an organic distributor in Catalunya.

Recipe Ingredients for Poppy-Prune Granola

3 cups rolled oats
1 cup raw pumpkin seeds
1 cup raw sunflower seeds
1/2 cup poppy seeds
1/4 cup flax seed
1/2 cup goji berries
1/2 cup chopped prunes
1/4 coconut flakes, sweetened
1/2 cup walnuts, in pieces
1/2 cup olive oil
1/2 cup honey
1/2 tsp. salt
1/2 tsp. pepper

Recipe Directions for Poppy-Prune Granola

Toss all ingredients together, place on a baking sheet for 35-45 minutes, stirring occasionally till golden. Don't let it cool on the pan! Better on parchment so you don't have a long and involved clean-up process on your hands.
