Recipe Ingredients for Popovers

1 tbsp unsalted butter, melted
3 eggs, large
1 cup milk, 3.25
1 cup all purpose flour
1/4 tsp salt

Recipe Directions for Popovers

  1. In a deep bowl whisk together the eggs, milk and butter. Beat in the flour and salt until smooth. Do not overmix, the batter should be thin.

  2. Fill each muffin cup two-thirds full.

  3. Place the pan on the central rack in the oven that has been heated to 375 F

  4. Bake the popovers until they are puffed high, deep golden brown and dry to touch (35-45 min)

  5. Do not open the oven for the first 30 minutes of baking, or the popovers won't rise fully

  6. Remove the pan from the oven and immediately pierce the side of each popover with a tip of a sharp knife and let them stand for 5 minutes before taking them out
