Makes 12 servings



Light and fluffy popovers. Can add cheese if desired.

Recipe Ingredients for Popovers

1 cup flour
1/2 tsp salt
2 eggs
1 tbsp margarine
1 1/4 cup skim milk

Recipe Directions for Popovers

  1. Wisk together flour and salt.

  2. In a seperate bowl wisk together remaining ingredients, margarine or butter may be used and must be melted first.

  3. Fold liquid mixture into the flour mixture. Do not over mix. There may be a few lumps.

  4. Pour mixture into pregreased muffin tins, 2/3 full. Bake at 425 for 15 minutes.

  5. Then turn down oven to 350 and bake for an additional 15-20 minutes until tops are golden brown. Do not open oven until at least the last 5 minutes as this may cause the popovers to fall.

  6. Remove from oven, punture to let steam escape, and serve warm.

  7. If you desire to use cheese, fill muffin cups with half of the batter, place shredded cheese on top, then pour remaining batter over the cheese and follow directions for baking.

  8. Makes 12 popovers.
