Chicken sauteed with vegetables and noodle, flavored with soy sauce.

Recipe Ingredients for Poor Man's Chicken Lo Mein

2 tbsp canola oil
1 cup onions, diced
1 tbsp minced garlic
10 oz chicken breast
3 tbsp soy sauce
3 cups frozen stir fry vegetables
5 cups whole wheat spaghetti , cooked
1 egg
1/4 tsp fresh ground pepper

Recipe Directions for Poor Man's Chicken Lo Mein

  1. Heat large non-stick skillet over medium-high heat. Add oil. Add onions and saute for a couple of minutes, stirring frequently.

  2. Add garlic, and saute one additional minute.

  3. Dice chicken into one-inch cubes. Add to pan and cook through. Remove to a separate dish.

  4. Put vegetables into the same pan and sprinkle with 2 of the tablespoons of soy sauce. Cover pan and allow to steam until the vegetables are tender.

  5. Add chicken and pasta to skillet and toss well with tongs, keeping food moving until heated through. Add additional tablespoon of soy sauce and the egg. Stir quickly to scramble the egg in with the noodles. Season with the pepper. Serve hot.
