It's very basic and is flexible to your tastes. Add carrots and/or onions to make heartier.

Recipe Ingredients for Poor Irish Soup

4 cups chicken stock
1 lb ham hock (1 single ham hock)
3 cups shredded cabbage
2 cups thinly sliced potatoes
1 teaspoon cream or milk (optional)
1 salt and pepper to taste

Recipe Directions for Poor Irish Soup

  1. Combine the stock, ham hock, and cabbage in a large stockpot

  2. Bring to a boil, then reduce heat to low and cover and cook until the potatoes are soft, about 30 minutes

  3. Carefully separate the meat from the bone of the ham hock and dispose of the bone, adding the meat back to the soup

  4. Stir in the cream; season with salt and pepper
