Chicken in a low fat curry sauce. Serve with rice or whole grain pilaf.

Recipe Ingredients for Pook's Chicken Curry

2 lbs chicken breast
2 cups fat free low sodium chicken broth
1 1/2 cups fat free evaporated milk
1 tsp curry powder
2 cloves garlic, minced
12 oz fresh mushrooms, diced
1/2 large onion, diced
2 tbsp water
2 tsp cornstarch

Recipe Directions for Pook's Chicken Curry

  1. Cut chicken into bite sized pieces. Use cooked chicken, or cook chicken first. (I cook mine in the microwave)

  2. Mix everything except water and cornstarch in a soup pot and heat until almost boiling.

  3. Mix cornstarch with very cold water. Add some of the hot sauce to the water and cornstarch. Add the cornstarch mixture slowly into the sauce while stirring. Continue to heat the sauce until it thickens slightly.

  4. Salt to taste, if needed.

  5. Serve over rice.
