This nutritious rice-bean dish is a popular south indian breakfast item.

Recipe Ingredients for Pongal

2 cups rice
1/2 cup mung beans, raw, mature seeds
1/8 tsp turmeric powder
1 salt to taste
1 tbsp vegetable oil
1 oz cashew nuts
1/4 tsp black peppercorns
1/8 tsp cumin seeds
1 tsp ginger, fresh, ground

Recipe Directions for Pongal

  1. rinse rice and mung beans.

  2. add turmeric powder, salt and pressure cook.

  3. heat oil (ghee is preferred), fry the cashew nuts, keep aside.

  4. add the ginger paste to the hot oil, saute for a few seconds, add the black peppercorns, cumin seeds, saute for a few seconds.

  5. add to the rice-mung, add cashews, mix well and serve hot with coconut chutney.
