We served this on Thanksgiving with ginger garlic sunflower salad dressing and it was a big hit. Beautiful color and great crunch with nuts and pomegranate arils.

1/4 cup grated carrots
1/4 cup grated radish
1/4 cup grated beets
1/8 cup chopped roasted walnuts
1/4 avocado
