I needed to use up some pomegranates (as you do!) and came across this recipe, I like to have it for lunch as it is quite filling.

Recipe Ingredients for Pomegranate and Pistachio Couscous

1 1/2 cups water
1/4 tsp cinnamon
1 cup couscous
2 tbsp mint, chopped
2 tbsp coriander, chopped
2 tbsp pistachios, chopped
100 g pomegranate seeds
2 tbsp lemon zest
1 tbs olive oil
400 g can chickpeas

Recipe Directions for Pomegranate and Pistachio Couscous

  1. Boil water

  2. Add cinnamon olive oil and salt

  3. Stir in couscous

  4. Cover and remove from heat, allow to stand for 5 minutes

  5. Fluff with a fork and add other ingredients.
