1 cup vegetable broth
1/2 red bell pepper
1/2 celery stalk
4 tablespoons olive oil
3 hot peppers
1 teaspoon tomato paste
1 clove garlic
7 ounces pancetta
1 1/2 cups red beans
1 egg white
1/2 cup semolina flour
1 egg
1/4 cup canola oil

Recipe Directions for polpette di fagioli rossi in salsa piccante

  1. in small sauce pan combine veggie broth, bell pepper, celery, 3 TBL olive oil, hot pepper, tomato paste, garlic and 1/8 teaspoon salt.

  2. bring to simmer and cook for 10 min

  3. remove and discard garlic

  4. remove sauce from heat

  5. brown pancetta about 8 min

  6. drain fat.

  7. in a food processor puree beans and transfer to a large bowl. add pancetta and remaining tablespoon olive oil plus egg white and 1/4 teasp salt. blend with hands until just combined well.

  8. form 1 tbl portions into 30 1 inch balls.

  9. put flour in shallow bowl.

  10. lightly beat whole egg in another shallow bowl

  11. dip 1 ball into egg, letting excess drip off, then dredge to lightly coat. repeat with remaining balls.

  12. warm sauce over low heat.

  13. in a large sauce pan heat canola oil. fry balls in 2 batches until dark golden crust has formed on outsie - about 3 min.

  14. serve with sauce.
