The special food for all gatherings in Central Asia. This is adapted from a Xinjiang recipe.

Recipe Ingredients for Polo

4 lbs carrots
2 large onions
12 cloves garlic
3/4 c olive oil
8 c rice
12 c water
1 tbsp ground cumin
1 tbsp salt

Recipe Directions for Polo

Heat oil. Add onions and grated carrots. Fry on high heat till the carrots turn color, stirring all the time. Add the water, salt, cumin, and whole garlic cloves. Bring to a boil and cook on high 15 minutes. Add rice, bring back to boil and turn down. Cook on low till rice is done, about 20 minutes. Makes 35 1-cup servings.
