Delicious stovetop chicken with diced tomatoes, onions and garlic.

Recipe Ingredients for Pollo Pomodoro

1 1/4 lb boneless chicken
28 ounces Diced Tomatoes (2 cans)
2 tbl olive oil
4 cloves garlic, diced
2 large onions, sliced
1/2 tsp salt
1/2 tsp pepper
1 tbl basil
2 tbl parmesan cheese

Recipe Directions for Pollo Pomodoro

  1. Heat olive oil in large skillet, season chicken with salt & pepper. Add chicken to pan and brown lightly. Add garlic and onions; simmer onions get soft.

  2. Add the diced tomatoes, season with rest of salt, pepper and basil. Stir good then add parmesan cheese. Simmer for 30 minutes or more. The longer the better.

  3. Sometimes I add cinnamon to the mix, it adds a nice flavor.
