Recipe Ingredients for Pollo Loco

2 tsp olive oil
1 large onion, diced
1 bell pepper, diced
1 jalapeno pepper, diced
1 tbsp cumin
3 cloves garlic, minced
1 3/10 lb ground turkey
822 g stewed tomatoes, mexican style
822 g tomato sauce
448 g Great Northern beans
448 g red beans

Recipe Directions for Pollo Loco

  1. Saute onion in oil until nearly soft.

  2. Add green pepper and saute a couple minutes longer.

  3. Add turkey and cook until no longer pink.

  4. Add jalapeno, cumin and minced garlic and cook for 5 minutes more.

  5. Add cans of tomatoes and tomato sauce. Simmer on low for 30 minutes.

  6. Add cans of beans and cook additional 15 minutes.

  7. Serve garnished with cheese if desired.
