Spanish Chicken Braised in Sherry, Garlic and Olives. Slightly modified to reduce fat but definitely not low calorie. Serve with white rice and a green vegetable, and garnish with parsely. A simple green salad is nice with this.

Recipe Ingredients for Pollo Estofado

2 lbs boneless chicken breasts
2 lbs chicken thighs, skin on
8 oz tomato sauce
1 tbsp salt
1/2 cup olive oil (original recipe calls for 1 cup)
12 olives
1 tsp capers
12 cloves garlic, peeled and crushed
1 medium onion, sliced
2 pounds potatoes, peeled and cut in medium cubes
1 cup dry sherry wine

Recipe Directions for Pollo Estofado

Put everything in a large pot and bring to a boil. Reduce heat and simmer, covered, for 1 hour. Remove lid and boil until sauce thickens to taste. Leave enough sauce for the rice.
