Chicken in a tomato, pepper and onion base

Recipe Ingredients for Pollo a la Chilendron

1 1/2 pounds chicken thighs
1/4 tsp salt
1/4 tsp ground pepper
1 T olive oil
2 large onions
1 tsp garlic
2 large bell peppers
2 oz country ham
3 cups tomatoes
120 g black olives

Recipe Directions for Pollo a la Chilendron

  1. Liberally salt and pepper chicken.

  2. Brown chicken quickly in olive oil at high heat and remove.

  3. Add onions, garlic, peppers, and ham at medium heat and cook until done but don't brown.

  4. Turn heat to high and add tomatoes and cook until sauce is thick.

  5. Return chicken to skillet and cover with sauce and cook on low for 30 min.

  6. Add black olives for last 5 minutes.
