Recipe Ingredients for Pollo ala Cacciatore (hunter style chicken)

2 1/2 pounds chicken
2 cups diced tomatoes
1 cup pepper, red, diced
1 cup onions, diced
1 cup mushrooms
1/2 cup tomato paste
1/2 cup white wine
1/2 tsp salt
1/4 tsp pepper
1/4 tsp oregano
2 tbs olive oil

Recipe Directions for Pollo ala Cacciatore (hunter style chicken)

  1. Use a whole chicken, cut in 8 pieces.

  2. Wash the chicken and season on both sides with salt and pepper.

  3. Saute the onions in olive oil for a few minutes and add the chicken.

  4. Cook, turning often, until the skin on the chicken begins to brown.

  5. Add the wine and simmer until the alcohol cooks off

  6. Put the chicken and onions into a casserole dish.

  7. Use the same pan to saute the peppers and mushrooms.

  8. When soft, add to the chicken.

  9. Combine the tomatoes with the tomato sauce and oregano, and pour over the chicken and vegetables.

  10. Bake covered at 350 for 40 minutes or until the chicken is tender.
