Recipe Ingredients for Polish Light Potato Bread

1 package active dry yeast
2 3/4 cups potato cooking water (for the bread dough)
1 cup mashed potatoes
2 tablespoons butter
2 tablespoons sugar
1 teaspoon salt
7 cups bread flour, sifted

Recipe Directions for Polish Light Potato Bread

  1. Boil and mash potatoes. Do not add anything to the potatoes. Reserve the water used for boiling for use in the bread recipe.

  2. Allow the potatoes and water to cool.

  3. When the water has reached the right temperature for your yeast, mix 1/4 cup of water and the yeast. Stir until the yeast is disolved. Set aside.

  4. In a large bowl, mix the mashed potatoes with 2-1/2 cups of the potato cooking water.

  5. Add softened butter, sugar and salt. Mix well with a wisk.

  6. Mix in three cups of the flour.

  7. Add the yeast mixture.

  8. Mix in three more cups of flour.

  9. Kneed bread, adding flour as necessary so the dough can be worked with.

  10. Place the dough in a large greased bowl and let it rise in a warm place until doubled. About 1 hour.

  11. Punch down the dough, divide in half and place in greased loaf plans.

  12. Allow the bread to rise again for 1/2 to 3/4 hour.

  13. Preheat the oven to 375F.

  14. Bake for 35 to 40 minutes until golden brown.

  15. Remove loaves and cool on a rack.
