Recipe Ingredients for Polenta Veggie Pizza

2 cups cornmeal
6 cups water
2 eggplants
8 oz. diced tomatoes
1 cup Mozzarella, Part Skim Milk, Low Moisture Cheese
1/2 cup parmesan cheese
1 cup Prego Spaghetti sauce

Recipe Directions for Polenta Veggie Pizza

  1. Prepare polenta ahead of time, pour onto cookie sheet and allow to cool

  2. roast eggplant and allow to cool

  3. pour spaghetti sauce over polenta "crust"

  4. top with eggplant, drained & rinsed tomatoes & cheeses

  5. bake in 425 degree oven for 20 minutes or until cheese is melted.

  6. Allow to cool for 5-10 minutes before slicing.

  7. Delicious!
