Try mashed polenta in place of lasagna noodles

Recipe Ingredients for Polenta Turkey Lasagna

1 lb polenta
8 oz greek yogurt
1 lb ground turkey
20 oz Mozzarella, Part Skim Milk Cheese
4 oz dry grits
4 oz Tomato Products
2 carrots, diced
1 jalepeno pepper, diced
1/4 cup balsamic vinegar
2 cloves garlic, diced
1/2 yellow onion, diced

Recipe Directions for Polenta Turkey Lasagna

  1. Brown turkey

  2. Reconstitute polenta with 1/2 cup of water, 1/3 greek yogurt. Add grits and if too thin and cook in microwave for 2 minutes. Add 1 cup of cheese.

  3. Saute carrots, pepper, garlic and onion in pan. Add balsamic vinegar. Add water to desired thickness.

  4. Layer polenta in bottom of 9x9 casserole dish.

  5. Spread greek yogurt on bottom of dish. Layer turkey and sauce and cheese. Spread another layer of polenta and layer cheese and sauce.

  6. Bake in oven on 350 for 35minutes
